Nevermore is inspired by the great tradition of Italian Vin Santi, reinterpreting the Malvasia Aromatica di Candia grape to allow its many facets to express themselves at their best. By drying on the vine the grapes maintain a very high concentration of flavour that is transformed into a wine full of character through slow pressing and long ageing in oak, cherry, chestnut, and acacia woods. Winner of the Top Wine prize, awarded by the Slow Wine 2021 guide. Nevermore amazes with its structure and complexity. A unique wine, unfiltered but stable thanks to a non-traditional ageing process that includes four transfers in small 100-litre barrels over the course of a decade. Aromas of spice and tropical fruit flow into dried apricot and hazelnut scents. The sweet palate develops into hints of date, fig and saffron. The perfect balance of sweetness and acidity to pair with dry pastries after a meal. With Nevermore the raven returns bringing exciting scents of lands worth discovering.
